Ingredients

  • 2 cups cheddar cheese, grated
  • 2 cups Swiss cheese, grated
  • ½ lb. ham, diced
  • 1 lb. white or whole wheat pizza dough
  • 1 large egg
  • 2 tbsp milk

Direction

  • Preheat the oven to 400° F.
  • Shred the cheeses and mix them in a bowl.
  • Flour your work surface and knead the pizza dough until smooth and the dough has a slow bounce back when pressed.
  • Divide the dough into 8 pieces. Roll each one out as close to a 6-inch x 3-inch rectangle as you can.
  • Fill the center of each rectangle with ½ cup of cheese mixture and 2 tbsp of the diced ham.
  • Stretch and fold the long edges into the center and pinch them together. Then stretch the sides into the center and pinch them to seal the pocket.
  • Lay the pockets, seam side down on parchment paper or a silicone-lined baking sheet.
  • Whisk together the milk and eggs in a small bowl and brush a generous amount onto the sides and top of each pocket.
  • Take a very sharp knife and slice 3 small and shallow vents at the top of each pocket.
  • Bake at 400°F for 25-28 minutes until pockets are golden brown. Let cool briefly and enjoy!
