Jane’s Buttermilk Biscuits

  • 2 C Self-Rising Flour, sifted
  • 1/4 C shortening
  • 3/4 C buttermilk

[/vc_column_text][vc_column_text]Preheat oven to 450 degrees. Cut shortening into sifted flour. Add milk and stir until flour is moist. Knead about 20 seconds on floured board. Roll to about 1/2 inch thick and cut with lightly floured biscuit cutter. Bake on greased baking sheet in 450 degree oven for 8-10 minutes. Sausage Casserole

  • 1 lb. Clifty Farm Sausage
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 med onion, chopped
  • 1/2 C celery, chopped
  • 1 cup wild or long grain rice
  • 1 whole green pepper, chopped
  • 4 oz. jar pimentos, drained
  • 1 C grated cheddar cheese

[/vc_column_text][vc_column_text]Prepare a 9 x 12 casserole dish. Cook sausage in skillet, crumble, and drain. Mix all ingredients together. Pour into casserole dish. Bake at 350 degrees for 1 1/2 hour. Remove from oven and serve.

  • 2 lb. Clifty Farm Sausage
  • 1 lb. Sharp Cheddar Cheese
  • 3 C Bisquick Mix

[/vc_column_text][vc_column_text]Grate cheese and mix all ingredients together. Knead like dough and keep mixing until thoroughly mixed. Shape into small balls (whatever size you like) and bake at 325 degrees for 20-25 minutes. These may be cooked and frozen. Just heat and serve.

Country Ham Quiche

  • 3 eggs
  • 1/2 cup Bisquick
  • 1/2 cup melted butter or margarine
  • 1 1/2 cup milk
  • 1/4 tsp salt
  • dash of pepper
  • 1 cup grated swiss cheese
  • 1/2 cup finely chopped Clifty Farm ham
  • 4 oz Mushrooms

[/vc_column_text][vc_column_text]Place eggs, Bisquick, butter, milk, salt and pepper in blender a small amount at a time and blend. Pour into greased 9-inch deep dish pie pan. Sprinkle in the cheese, chopped Clifty Farm Country Ham and mushrooms and press into custard mixture with back of tablespoon. Bake at 350 degrees for 45 minutes. Hot Country Ham Dip

  • 2 (8 oz) package cream cheese, softened
  • 1 cup sour cream
  • 1/2 – 1 cup chopped Clifty Farm Cooked Country Ham
    (our Boneless Cooked Ham works well for this recipe)
  • 1/4 cup finely minced onion
  • 1/2 tsp garlic powder
  • 1 Tbsp butter
  • 1 cup chopped pecans
  • 1/2 tsp Worcestershire sauce

[/vc_column_text][vc_column_text]Preheat oven to 350 degrees. Combine cream cheese, sour cream, country ham, onion and garlic powder in a small bowl and place in a baking dish. Then saute butter, pecans, and Worcestershire sauce and sprinkle over baking dish. Refrigerate until serving time. Bake for 20 minutes.
