Spinach and Ham Salad

Wash and drain:
1 10oz package fresh spinach

Slice into rings:
1 red onion

Cut into strips:
1/4 lb Clifty Farm Country Ham
(Our Boneless Cooked Ham works well in this recipe)

Toss lightly with spinach. Make this dressing to be poured over salad at the very last minute.

Mix:
1/2 cup vinegar
6 Tbsp sugar or less, to taste
salt and pepper to taste
1 cup salad oil
1 tsp celery seed

Garnish with:
2 sliced hard cooked eggs
seasoned croutons (optional)

Use your imagination, add a little lettuce, pickled beets, cherry tomatoes, and julienne strips of cheese.
